Creamy Coconut Cheesecake Perfect For Celebrating National Dessert Day (Or Any Dang Old Day Of The Year)

What's that? It’s National Dessert Day and you thought we had forgotten? As lifetime members of the Sweet Treat Daily Club™ we take offense to that. Not only do we have a brand new easy homemade cheesecake recipe for you, we’re also gonna revisit some of our favorite blast from the past dessert recipes from our archives. The Recipe Card

So, here we are at the intersection of coconut lovers, easy cheesecake recipe enthusiasts, and just plain ol’ dessert devotees. While this recipe may be a little more of a labor of love, it is surely worth the extra time in the kitchen. And if you can’t spend a little more time in the kitchen on this, the holiest of days, National Dessert Day, then when??

So now is about the time you’re probably beginning to wonder aloud, “how do I make a cheesecake?” or, “how do I make cheesecake filling?” and possibly even, “how do I turn these Graham Crackers into a crust??” It’s ok babe, we’re gonna get through this together. Find your springform pan, dust off the cobwebs, and let’s get to work.

After you’ve assembled your crust and put it in the oven to bake, it’s time to start on the filling. What makes this recipe extra special is our Rich & Creamy Dairy-Free Yogurt Alternative! By using our dairy-free coconut yogurt a few cool things happen: your cheesecake will have a delicious subtle coconut flavor, setting it apart from traditional (delicious, but boring) cheesecakes; and by cutting back on the usual dairy used in cheesecake recipes you’ll wind up with a cheesecake that’s a little lighter in texture, but definitely not light on taste.

Once your filling is mixed, pour into your cooled crust. Now here comes the really fun part: water bath. That’s right. We’re doing kitchen science over here. It’s all in the instructions provided below, but basically, you’re going to create a luxurious spa-like environment in your oven for your cheesecake to take her time gently steaming to perfection. She’s worth the extra effort and she knows it. Once your cheesecake is cooked through and fully cooled, decorate with whipped cream and toasted coconut. And most importantly, enjoy. What You'll Need

For the Graham Cracker Crust:
  • 2 cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ tsp kosher salt
  • ½ cup unsalted butter, melted
For the cheesecake:
  • 32 oz full fat cream cheese, softened
  • 1¼ cups granulated sugar
  • 3 tbsp cornstarch
  • 3 large eggs
  • 1 egg yolk
  • ½ cup Harmless Harvest Unsweetened Plain Rich & Creamy Dairy-Free Yogurt Alternative
  • ½ cup sour cream

How To Make It

1. In large bowl, add graham crackers, sugar, salt and butter. Stir with a fork or nonstick spatula until sandy mixture forms. Line a 9-inch springform pan with parchment paper and preheat oven to 350°F. Pour graham crust into springform pan and press down with back of a spoon. Bake crust for 10 minutes and set aside to cool.
2. In a separate large bowl, add cream cheese and sugar. Beat with a hand mixer until light and fluffy. Add cornstarch. Scrape the sides of bowl and mix again. Add eggs and mix until homogeneous.
3. Scrape sides of bowl, add in Harmless Harvest Unsweetened Plain Rich & Creamy Dairy-Free Yogurt Alternative and sour cream, and mix until smooth. Pour into cooled crust.
4. Lower oven to 325°F. Create a faux water bath by placing a roasting pan filled halfway with boiling water in bottom rack of oven. Place cheesecake in oven on rack above roasting pan. Bake for 1 hour and 10 minutes without opening oven door.
5. Turn off oven and keep door of oven slightly cracked. The cheesecake will continue to cook with door cracked. Remove after about 45 minutes, when cheesecake is puffed and center is set.
6. Let cool and top with whipped cream and toasted coconut!
